Banana Apple Spice Cake with Caramel Frosting
Ingredients
- 2 - 3 ripe bananas (mashed)
- 2/3 cups brown sugar (packed)
- 1/3 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 2/3 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1 large or 2 small apples (chopped)
- 1/3 cup chopped walnuts (optional)
- 2 tablespoons butter
- 2 tablespoons brown sugar
- 2 tablespoons cream
- 1/2 teaspoon vanilla extract
- 1 1/2 cup confectioner's sugar
Directions
1. | Preheat oven to 350*F. Grease an 8 1/2 by 4 1/2 inch metal loaf pan with butter. |
2. | In a large bowl, mix together mashed banana, brown sugar, vegetable oil, eggs, 1 1/2 teaspoon on vanilla extract with a hand mixer on low speed until blended. |
3. | In a medium bowl, mix together flour, baking powder, salt, baking soda, and pumpkin pie spice until well blended. |
4. | Add flour mixture to banana mixture and mix on low speed for 2 minutes. |
5. | Fold in chopped apples and walnuts. |
6. | Spread batter into prepared pan. Bake in preheated oven until toothpick inserted into cake comes out clean, about 45 minutes. |
7. | Set on cooling rack for 20 minutes. Remove from pan and let cool completely. |
8. | Frosting: In a small pan melt butter and brown sugar together on medium-high heat until bubbly. Remove from heat and carefully add cream and 1/2 teaspoon of vanilla extract, stirring thoroughly. Add 1 cup of confectioner's sugar to butter mix and beat until blended add more sugar as needed to get to spreadable consistency. Frost cooled cake. |
