Who doesn’t love the polar vortex right about now? I’m not trying to rush spring along, but I have had enough of the below zero temperatures, ice and snow. I’m in full blown vitamin D deficiency. If you are in the same predicament, I have a little relief for you. It’s a think spring post that includes frosting. Mmmm … frosting, I’m already starting to feel better.
Butterfly Cupcake Toppers
(Adapted from The Cheese Thief.)
These butterfly cupcake toppers are so simple to make. All you need is parchment paper, cooking spray and Jolly Ranchers. I used 4 of each color (green, pink, purple and blue). Unwrap the candy and place each color in a separate baggie. Place the baggie on a cutting board and finely crush the candy with the bottom of a pan. Place the crushed candy in separate bowls. Preheat the oven to 300 F. Place a piece of parchment paper on top of a cookie sheet and lightly spray with cooking spray. Spoon the crushed candy into wing shapes. Make one left wing and one right wing. You can mix colors if you like. Bake in oven and check after two minutes and then every 30 seconds. The candy melts fast. Remove from oven when melted. Be careful the melted candy is very hot. Let cool and peel away prom parchment.
Add wings to your favorite frosted cupcakes and enjoy.
Sixteen days until spring, but who’s counting?
