Cranberry Cheesecake Bars Recipe
We love cheesecake in our house, so when our son came for a visit last weekend, I made a batch of these Cranberry Cheesecake Bars. Any recipe that has chocolate chips as one of its ingredients is always a big hit. I managed to get a few pictures of them before they were devoured.
Cranberry Cheesecake Bars
Ingredients
- 2 cups Flour (plus 2 Tbs, divided)
- 1 cup quick-cooking oats
- 3/4 cups brown sugar (packed)
- 1/2 cup butter (melted)
- 1 box (8 oz.) cream cheese
- 1 can (14 oz.) sweetened condensed milk
- 4 egg whites
- 1 teaspoon vanilla extract
- 1 can (14 oz.) whole cranberry sauce
- 2 tablespoons cornstarch
- 1/2 cup semi sweet chocolate chips
Directions
1. | Preheat oven to 350*F. |
2. | In a bowl, combine 2 cups of flour, oats, brown sugar and butter. Mix until crumbly. |
3. | Press 2-1/2 cups of crumb mixture into a greased 13" x 9" baking dish. |
4. | Bake for 10 minutes. Remove from oven. |
5. | In a mixing bowl, beat cream cheese until smooth. Add sweetened condensed milk, egg whites, vanilla and remaining 2 tablespoons of flour, mix well. Pour over prepared crust |
6. | In a bowl combine cranberry sauce and cornstarch, mix well. Spoon over cream cheese mixture. |
7. | Sprinkle evenly with chocolate chips and top with remaining crumb mixture. |
8. | Bake for 30 - 35 minutes or until center is almost set. |
9. | Cool on wire rack before cutting. Yields 3 dozen. |
