Easy Lemon Blackberry Mini Tarts
What has only four ingredients, doesn’t need to be baked, tastes delicious and looks as though you studied to be a French pastry chef? I might be exaggerating a tiny bit, but these Easy Lemon Blackberry Mini Tarts are that good … in my humble opinion.
Ingredients:
1 – 8 oz. container of mascarpone cheese
1 pint of blackberries
mint (optional)
white serving platter with handles
You can find the mini phyllo shells in the freezer section of your grocery store. They come in boxes of 15 and they are pre-baked and ready to use. The lemon curd is usually found in the jam section.
In a medium size bowl, fold together the lemon curd and mascarpone cheese until the mixture is combined. Add a dollop of lemon cream mixture into each shell. Top with a blackberry. Optional: sprinkle chopped mint over tarts. Refrigerate until ready to serve.

- 1 pint blackberries

Directions
1. | In a medium size bowl, fold the lemon curd into the mascarpone cheese until the mixture is combined. |

4. | Refrigerate until ready to serve. Makes 45 mini tarts. |
